Mango Cilantro Chicken

I got the chance to review the new paleo cook book Make Ahead Paleo by Tammy Credicot. First off this book is gorgeous. The pictures in this book will make you so hungry. I also loved the creativity in the recipes. The book is absolutely true to paleo and has no recipes that contain grains, gluten, dairy, soy, legumes (well I think I saw a green been recipe) or cane sugar. The other big difference in this book is that it is aimed at what many of us do which is prepare meals ahead of time and freeze them. Having a healthy meal ready to go when you are hungry can be a life saver. In the book there are over 100 beautifully photographed recipes. It comes with inventory sheets to keep track of the frozen meals. Recipes for your slow cooker to have wonderful meals for you waiting at home. Recipes to take on the road and meals you can make in your hotel room, so you never have an excuse for not eating well. For many who are not great at making up dishes this book will really help you create wonderful meals ahead of time. If you’re looking for a new paleo cook book then I suggest grabbing a copy of Make Ahead Paleo when it goes on sale September 24th! Now let me share a favorite recipe from the book with you.

Mango Cilantro Chicken

I knew when flipping through the book this would be a must try recipe. I’ve a huge fan of cilantro and thought that it would be great with mango. The ingredients for this recipe are as follows:
  • 1 mango
  • 1/2 cup, I used a whole cup, of Cilantro loosely packed
  • 1 small shallot, I used green onions.
  • 2 tsp of ginger
  • 2 cloves of garlic
  • 1/2 cup of coconut milk
  • 1 TBSP of apple cider vinegar
  • 1 TBSP of lime juice
  • 1/2 tsp hot sauce
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 pounds of boneless chicken thighs

Place all the sauce ingredients in a food processor and pulse until they are chopped but still chunky. Season the chicken with salt and pepper. Place the chicken in a freezer bag with 1/3 of the sauce to marinate. When ready to cook heat 1 TBSP of oil on med high heat in a large skillet. I used bone in chicken and it took longer than the recommended six minutes per side. While cooking the chicken heat up the remainder of the sauce to spoon over the chicken.

This recipe was super easy to follow. The prep work, which I did the previous day, took a few minutes and was easy since it all went in the food processor. I had to add more salt to the chicken I really like salt. Besides that it is such a bold flavor. I loved the taste of the cilantro mango sauce. I can’t wait to try more recipes from this book. There are so many I don’t know where to even being. Everyone should go make this amazing dish and grab a copy of Make Ahead Paleo for even more great recipes to try.
